Jerry Prendergast
Jerry Prendergast is the founder of Prendergast and Associates, and has been an adviser and consultant on every type of restaurant project - from creative mall and shopping center restaurants to high profile, large budget operations around the world.
 
Jerry has developed a reputation for taking the vision of the chef or owner and turning that dream into a profitable business. His extensive restaurant management experience, along with a lifelong passion for fine food, wine, and high quality service, gives him unique insight into establishing and successfully running a high quality establishment.
 
 
He has been retained by large corporations, including Disney, Safeway/Host Marriott, and Festival Companies on such projects as “Encounter” in the landmark theme building at Los Angeles International Airport,” and both the food court and stand alone restaurants in the Royal Hawaiian Center in Honolulu. He also has worked extensively in New York with numerous fine dining restaurants, including his association with New York Restaurant Group, owners of Smith & Wollensky. Additionally, many world-class chefs chose Jerry to help them create a variety of one-of-a-kind fine dining establishments, including Los Angeles’ critically acclaimed Divino, Alex, and Melisse.
 
 
Jerry is currently based in Los Angeles California. In addition to his consulting projects, he is actively involved in the local food scene, contributing reviews to local newspapers, and hosting a yearly fundraiser.
 
Elizabeth O'Neil
Elizabeth is a successful real estate sales professional who specializes in restaurant sales.
 
Her body of work includes some of Los Angeles’ landmark restaurant sales, as well as smaller businesses, all of them uniquely challenging and equally important.
 
 
Having owned and operated restaurants for over 15 years before starting a career in real estate career, Elizabeth has insight into the daily demands that restaurant owners face. Attention to detail, resolving challenges, and maintaining a personal service are all talents Elizabeth possesses to successfully guide clients throughout a transaction while staying dedicated to her genuine desire to help people attain their goals and dreams.
 
 
Elizabeth is a licensed Real Estate Agent in California with Keller Willams Santa Monica and a member of the Beverly Hills / Greater Los Angeles Association of Realtors.
 
Gregory Golem
Gregory specializes in kitchens, bars, and equipment specifications and has overseen the design and development of over 400 restaurant and bar operations worldwide, including Malaysia, Singapore, Japan, Korea, Kuwait, Hong Kong, Beijing and Shenzen China. His background in foodservice operations provides unique perspective and insight into the client’s design and contributes towards creating a profitable establishment.
 
 
His menu based design integrates people, product and production flows to create an effective layout that will produce the appropriate quality and quantity of food and be compliant with the prevailing regulatory codes.

Gregory is the owner & Principal consultant of Interactive Restaurant Consulting, Inc. He has a BA degree in Human Factors, Industrial Psychology. He is recognized as a Certified Foodservice Professional by the North American Association of Food Equipment Manufacturers.
Sharon Nieber
Project Manager, Hawaii
Sharon joins Prendergast & Associates with over 14 years production experience in corporate meeting and events in New York City. As an accomplished producer of corporate events, she has facilitated innovative staging and media elements for profitable and well-received product launches, trade shows, award shows, and network upfronts for various Fortune 500 companies. Sharon now brings her producing expertise to Prendergast & Associates to incorporate into the production of successful restaurants throughout the Hawaiian Islands.
 
 
Prior to her years in corporate production while working toward a degree in art, Sharon spent 10 years as a mixologist in varied New York City restaurants and night clubs. In these establishments, she acquired the skills to provide exceptional customer service while developing an affinity for great food, inventive beverages and pleasing decors.
 
 
Sharon has relocated to her dream location, Hawaii, where she truly hopes her diverse background and strong communication skills will enhance the Hawaiian restaurant community.
 
Keith Reschke
Project Coordinator
After a one year internship shadowing Jerry Prendergast and working closely with industry professionals, Keith is the most recent addition to Prendergast & Associates. He brings eight years’ experience in restaurants having worked nearly every position in the business. His experience stems from positions within buffets, casual dining, country clubs, and five star restaurants.
 
 
Keith is currently a senior at California State University, Long Beach. He is working towards a double major with Hospitality management & Construction Engineering Management. His education also includes a semester in Italy at Apicuis: The Culinary Institute of Florence. While enjoying his studies abroad, he gained valuable knowledge in European wines, food, and culture.
 
 
Keith excels at managing large scale projects. As the captain and president of the ultimate team at California State University, Long Beach, his ongoing task was to manage numerous people on a tight budget. As a result, the sport has given him expertise in team building and effective leadership.
